This might be stretching the limit of "successful NFL HC", but Mike Sherman of GB didn't accomplish much at TAMU other than earn millions of dollars. Lovie Smith of CHI and Illinois is another.

Bruce Arians. Two winning seasons out of six at Temple and the second one in 1986 was disqualified because Paul Palmer signed with an agent that season.
